Typically, the free fatty acids are oxidised to the 9-, 10- or 13-hydroperoxides, which is catalysed by LOX.
Subsequently, the hydroperoxides are cleaved mainly into C6-, C9- and C10 aldehydes in the presence of hydroperoxide lyases.

During the initiation phase, hydrogen is abstracted from the lipid to leave a lipid rad- ical, which reacts with molecular oxygen to form a lipid hydroperoxide (Figure 8.9).
The second phase involves the breakdown of the lipid hydroperoxides by cleavage of the CdC bond on one side or other of the radical.
