Salmonella
Salmonella is an important cause of foodborne disease in humans throughout the world and is a significant cause of morbidity, mortality, and economic loss [1-6].
The main reservoir of zoonotic Salmonella is the gastrointestinal tract of warm-blooded animals including food-producing ani- mals.
Since the early 1990s, surveillance programs and control methods for Salmonella in the farm-to-fork continuum have been implemented in an increasing number of countries worldwide [10,11].
The growing awareness of a global food market has led to international initiatives toward a global control of Salmonella.
